For all I know, it's because now they're using Dynasty Warriors 9 engine.

DOA6 is using a different engine, which made the color dull and their skin tone like a mannequin. I had some DOA6 models extracted from the game but It's actually just the same model structure from DOA5 only with new costumes, 50% higher polygon count and facial bones.

DOA 6 and SCVI were both massive disappointments from a visual perspective. For the early 2010s, DOA 5 & SCV were astonishingly well detailed and on par with the best visuals the medium had to offer. Fast forward to late 2018-early 2019 we now have massive open-world games like RDR2 or HZD that completely blow every modern fighting game out of the water, at least in regard to graphical fidelity (which is criminal considering just how limited the scope of fighting games are, easily facilitating overhead for much higher geometric complexity and environmental detail that SHOULD surpass the open-world genre by a large margin).

The only sensical conclusion to draw from this is developers of fighting games are becoming lax in their craft and half-assing the presentation since they know long time fans will buy them in droves regardless. I suppose there also exists the argument of graphics vs. gameplay, in which the latter usually dominates most gamers' priorities. But I'd argue that DOA5 & SCV were mechanically superior to DOA6 & SCVI respectively. So as far as I'm concerned these new entries fail on all accounts.

All these years I've been eagerly awaiting the revival of the Virtua Fighter series only to have my hopes dashed time and time again. Perhaps it's better to let the series die in peace as opposed to being lazily executed like DOA and SC's latest iterations... Not to mention the abominable SF5 for that matter.

No one in the right mind thinks SCV is better than VI, fuck outta here. I love too that graphical fidelity in japanese games, particularly a relatively niche genre like fighting games plateauing relative to the absolute most expensive blockbuster western games can only be explained with 'the devs are lazy assholes', no consideration for any other factors...even then, the assertion that HZD looks that great is humorous, the people in that game look like fucking ghouls and the world is just muh foilage density.
