In Ocarina of Time, he does. When you go to face him in his castle, you walk in on him playing the piano... or an organ, one of the two. Then he stops, says a few words, the organ and Princess Zelda fade away and then the fight starts.

Yes, it's a pipe organ. Common in churches. And my favorite instrument to play the theme from the Exorcist on. Also the theme from the boss castle in Super Mario World.
