That would actually be plausible, we see Korok in Breath of the Wild which are from The Wind Waker so that confirms this game is either before or after WW. In WW Ganondorf talks about his country and how he coveted the winds of Hyrule. It sounds an awful lot like he wasn't always evil but something happened to him that made him do what he had to do. That "something" might have been demise's curse on Link that was passed on through Ganondorf. It would actually be pretty heartbreaking.

Having a good Ganondorf be Link's mentor early on then turn evil due to Demise's curse would still be very interesting for one purpose : to break the curse once and for all as a mean to save his mentor, either directly or through his next incarnation.
