Also when exactly does the end of the show take place? When they have their kids, she has short hair, but in the manga she's still got long hair.

The order of events is

The Last Epilogue > Ch. 700 > Gaiden > Boruto the Movie

She has cut and let her hair grow a couple of times in that period.
