Kemonomimi enthusiast here, it's about the fact that the girl inherits the character traits that said animal exemplifies in tropes, i.e. in mythology and other stories, but not in real life. That is, it's more about the attitude and cuteness, rather than anything about the real animal.
So, when you look at a cute fox girl, you are not thinking of real foxes, but rather the story-foxes present in the common historic cultural library, which is still present in today's entertainment. That is one reason, why in east-themed stories it is foxes (Kanokon, Senko-san), but in west-themed stories it is wolf-girls (Spice and Wolf, MagiPoka).
With that said, Kemonomimi is close to zero on the furry scale, so as far as this topic goes, IDK.
