I didn't get that far into the Anime, but who is the Evil Shinobu supposed to be? Her evil side, or some mirror image of her and that takes on a form?

They never showed her in the anime... not once outside of the opening. Maybe she's in the manga (if there is one)

There is, but it's only 3 volumes long, I don't have the 3rd volume yet, but the other two she isn't in there either.

I heard she was just used in the opening scene as a joke.
