Multiple human characters have been touched by Grimer and Muk in official Pokemon works and came out unscathed (Professor Oak comes readily to mind), and in Pokemon Amie, trainers can put their hand right on them. It's likely that they are able to control their toxicity to prevent poisoning others unintentionally.

According to Pokémon Refresh in Pokémon Sun and Moon, petting your Grimer/Muk simply results in a gross, "sludge-y" sensation and a probable need to wash your hands afterward. She'all probably be fine as long as she takes a bath afterward/rinses out her orifices lol.
