(this is Anon1) Her personality mostly. She just struck me as a character who wouldn't have much interest in sexual activity. I love Rosalina, she is the best Mario Princess, but for some reason I got an asexual vibe from her. And it isn't just because of the Mario series' character structure, I can see Peach and Daisy, even Toadette and others as enjoying sex, it's just Rosalina for some reason... (This is way too long winded of an explanation of my headcanon...)

Rosalina spent a lot of her life away from other humans to take care of the Lumas, so while the Lumas and possibly various other aliens served to help her interact like a normal person, she probably never had much in the way of a romantic life. She seems satsified just being a mother too, so pairing her would be pointless.
I think that's why Nintendo hasn't paired her with any males. Well that and the only options left being a little weird. I can't see Wario or Waluigi being her type (but those pairings do sound interesting, I'd pair her with Wario just because Wario has good taste in women already) and she probably wouldn't get along with Bowser for obvious reasons.
It'd be funny if she turned out to be a lesbian though.
