in the new Rebuild universe she has a female partner, and no other remotely close human contact. Not that there is any particulat chemistry between them, but people have to make slash with what they have.
In the original Eva she had plenty of chemistry (albeit toxic and corrosive) with Shinji, and it was a very popular tragic relationship.

In the original series, Asuka absolutely hated Rei, and thus Yuri pairings between the two were a lot harder to believe (not that it stopped fanart per say, but proportionally there is a heck of a lot less Yuri of Asuka/Rei than Yaoi of Shinji/Kaworu).
Secondly, even after the 3rd Rebuild film, Mari really hasn't gotten much character development, so fans have felt free to project whatever personality they feel like onto her, thus making it easier to ship her with Asuka.
And yes, as the above Anon said, people have to make slash with what they have, but now its a lot easier, hence we have a sudden flood of Asuka/Mari fanart.
