Just an educated guess here but...

The date of the first upload, which seems to have occurred around midnight, so I figure the site was actually put up the day before.
Gelbooru was created as a result of Danbooru's death. It still uses Danbooru's images after its rebirth.
If Danny ever goes down again, Gelbooru has a massive backup of most of its images.

May 25th, 2007. That is when the domain was registered and code was being tested. Uploads have a later date because we had to dump the database many times over the months to fix bugs.
